Raw Bircher Muesli

For many people who recently switched to raw food breakfast often presents a dilemma. A piece of fruit or a smoothie may not be enough. So, what to eat?


One of the nicest and rather healthy option is a Bircher muesli, or a raw overnight porridge. It is very easy to make and nutritious. Bircher muesli was created in early 1900s by a Swiss physician and nutritionist Maximilian Bircher-Benner, who wished to improve gastrointestinal health of his patients and provide them with a healthy breakfast alternative.

Ingredients:
  • 1 cup raw oatmeal
  • 1 tsp chia seeds
  • 1 1/2 cup raw almond milk, preferably freshly made
  • 1/4 cup raisins
  • 1/2 cup activated almonds or hazelnuts, roughly chopped
  • 1 tsp raw honey
  • 1/2 grated pear
  • 1/2 grated apple
  • 2-3 sliced fresh strawberries
  • 1 Tbsp freshly pressed lemon juice
  • pinch cinnamon 
  • pinch Celtic sea salt to balance the flavors


Method:
  • Place raw oats and chia seeds in a bowl.
  • Pour raw almond milk into a bowl and mix well. Add raisins and chopped nuts, and mix again. Cover the bowl and place it in a fridge overnight.
  • In the morning, add honey, lemon juice, salt and cinnamon. Mix well. Add more almond milk if you find the mixture too thick. 
  • Add grated pear and apple, and sliced strawberry. Mix again. 
  • Serve in individual bowls and enjoy in good company!

Tip: Expand your repertory and try muesli with freshly grated carrot and freshly grated ginger; goji berries or fresh blueberries and sliced banana; dried or fresh cherries; or pineapple, coconut, and mint. Add sunflower seeds, hemp nuts, pecans or pumpkin seeds. To prevent fruit from turning sour, always add the fruit in the morning.
